Banana-date-bran Muffins Recipe
Ingredients:
1 c. All-Bran cereal1/4 c. milk
1 1/3 c. mashed, ripe bananas
1 1/4 c. flour
1/4 c. sugar
1 tsp. baking soda
1/4 tsp. salt
1/2 c. chopped, pitted dates
2 eggs
4 tbsp. melted butter
1 tsp. vanilla
Cooking Directions:
Preheat oven to 400 degrees. In a small bowl, combine bran and milk and bananas. Set aside for 5 minutes.In another bowl, stir together flour, sugar, baking soda, salt, and dates. Beat eggs, butter and vanilla into bran mixture and add dry ingredients. Stir until flour is just moistened, batter will be lumpy. Grease muffin tins or use paper liners. Bake 20 minutes at 400 degrees or until golden brown. 165 calories per muffin.
