Whole Wheat Banana Muffins (light) Recipe

Ingredients:

1 egg
1 c. skim milk
1/2 c. vegetable oil
1/4 c. maple syrup or honey
1/2-3/4 c. mashed banana
2 c. whole wheat flour
3 tsp. baking powder
1/4 tsp. nutmeg
1 tsp. cinnamon

Cooking Directions:

Preheat oven to 400 degrees. Beat egg, then combine with milk, oil, maple syrup, and banana. Mix in remaining ingredients until just moistened (batter should be lumpy). Fill muffin cups 2/3 full and bake 20-25 minutes. Makes 12 to 18 muffins.
