Blintzes Recipe

Ingredients:

1 c. flour
2 eggs
1/4 tsp. salt
Enough milk to make batter thin
1 c. Ricotta cheese
1 tsp. lemon juice
1 tbsp. sugar (optional)
2 eggs

Cooking Directions:

Makes about 6 blintzes. Serve with applesauce and sour cream.

Oil a large heavy skillet, heat it up until the batter sizzles when a drop hits it. Spoon a ladle full of crepe mix onto skillet, pick up skillet and swirl so the pancake covers the bottom. Carefully flip it when the pancake bubbles and turns brown at edges
