Diet Bran Muffins Recipe
Ingredients:
2 tbsp. shortening3 tbsp. sugar
1 egg
3/4 c. milk
1 c. bran
1 c. flour
2 tsp. baking powder
1/2 tsp. salt
Cooking Directions:
Cream sugar and shortening; add egg and beat well. Stir in milk, then bran. Add flour sifted with baking powder and salt; stir until dry ingredients are just moistened.Fill greased muffin pans 2/3 full (or use paper baking cups) and bake in hot oven 425 degrees 20 to 25 minutes or until golden brown. Any type of bran may be successfully used in this recipe. Makes 8 to 12 muffins.
FRUIT BRAN MUFFINS:
Add 1/2 to 3/4 cup raisins or chopped dates.
