Rhubarb-strawberry Coffee Cake Recipe
Ingredients:
3 c. flour1 c. sugar
1 tsp. soda
1 tsp. baking powder
1 tsp. salt
1 c. butter
1 c. buttermilk
1 tsp. vanilla
2 eggs, slightly beaten
3 c. rhubarb
1 (16 oz.) thawed sweetened strawberries
2 tbsp. lemon juice
1 c. sugar
1/3 c. cornstarch
3/4 c. sugar
1/2 c. flour
1/4 c. butter
Cooking Directions:
Mix first 5 ingredients, cut in butter. Beat buttermilk, eggs and vanilla together. Add to dry ingredients. Spread half into greased 9x13 inch pan. Spread cooled filling over. Spoon rest of batter over filling in mounds.TOPPING: Combine sugar and flour, cut in butter. Sprinkle over filling. FILLING: Cook rhubarb and strawberries in covered pan for 5 minutes. Add lemon juices. Combine sugar and cornstarch, add to rhubarb mixture, cook until thickened.
Bake at 350 degrees for 40-50 minutes.
