Kim's Pumpkin Cake Recipe
Ingredients:
1 can (1 lb.) pumpkin2 c. sugar
4 eggs
3 c. flour
2 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 c. oil
1 c. chopped nuts
1 c. chocolate chips
1 c. powdered sugar
Few drops orange juice
Cooking Directions:
Mix in large bowl pumpkin, sugar and eggs. Mix together then add to large bowl the flour, baking powder, baking soda, salt and cinnamon. Add and mix the oil. Stir in nuts and chips. Pour into greased tube pan and bake at 350 degrees for 1 hour and 10 minutes only. While cake is warm cover with glaze.Glaze: 1 cup powdered sugar and add orange juice a drop at a time to make thin.
