Homemade Noodles Recipe

Ingredients:

3 eggs
1 c. flour (additional will be needed)
3/4 tsp. salt
2 lg. cans of chicken broth

Cooking Directions:

Break 3 eggs (extra large) in glass bowl. Sprinkle salt over eggs and stir up good with fork. Add 1/2 cup of the flour and beat up good with fork. Add another 1/2 cup and stir good. Keep adding additional flour a little at a time until very stiff.

Place on a floured board and keep working in flour and kneading like bread dough until so stiff you can hardly roll out. Roll thin and let set 1/2 hour, then turn over and let set 15 minutes. Cut rather thin, 1/8 inch. Put in plain boiling water and oil for 2 minutes (this gets the excess flour off). Drop in hot chicken broth. Cook on VERY LOW heat, just barely boiling for about 50 minutes. If they are real stiff it might take 1 hour. It takes a lot of broth, don't add anymore water than you have to.
