1. Hearty Hungarian Goulash
1 tbsp. oil, 1 1/2 lbs. beef cubes, 1 can (16 oz.) stewed tomatoes, 1 env. Lipton Onion or Onion-Mushroom Soup Mix, 1 1/2 tbsp. paprika, 2 tbsp. all-purpose flour, Salt to taste, 1 c. water, 1/2 of 16 oz. pkg. wide egg noodles

2 lg. potatoes, cubed, 2 med. carrots, sliced, 2 c. celeriac or turnip or parsnip, peeled and cubed, 1 bay leaf, Water or vegetable stock, 1 tsp. salt, 1 (28 oz.) can tomatoes, 3 tbsp. oil, 1 med. onion, chopped, 1 tbsp. Hungarian paprika, 2 tbsp. dried marjoram, 1 tbsp. tarragon or parsley, 2 tbsp. caraway seeds, 1 tsp. black pepper, 2 c. chopped green cabbage, 2 c. sliced mushrooms, 1/2 to 1 c. water, as needed

4. Transylvanian Goulash
1 lb. sauerkraut, 2 tbsp. oil, 1 c. finely chopped onions, 1/4 tsp. finely chopped garlic, 2 tbsp. sweet Hungarian paprika, 3 c. chicken stock or water, 2 lbs. boneless shoulder of pork, cut into 1 inch cubes, 1 1/2 tsp. caraway seeds, 1/4 c. tomato puree, Salt, 1/2 c. sour cream, 1/2 c. heavy cream, 2 tbsp. flour

5. Pork And Sauerkraut Goulash
3 lbs. lean pork shoulder, cut into 1 1/2 inch cubes, 4 tbsp. rendered pork fat or olive oil, 3 lg. onions, chopped, 1 tbsp. Hungarian paprika, 2 green peppers, peeled, seeded and cut into thin strips, 1 bay leaf, 1 c. water or chicken stock, 1 1/2 c. canned Italian plum tomatoes, 2 lbs. sauerkraut, well rinsed and drained, Salt and freshly ground pepper, 1 c. sour cream or yogurt

2 c. onion, chopped, 2 lbs. stewing beef, 3 tbsp. butter, 2 tbsp. hot Hungarian paprika (very fresh), 2 tbsp. caraway seeds, 1 c. raw grated potato, 2 tsp. salt, 1 tbsp. tomato puree, 8 c. beef broth, 2 c. diced raw potatoes, 1 sm. hot green chili pepper, diced, 1 c. flour, 1 1/2 tsp. baking powder, 1/2 tsp. salt, 2 eggs, beaten

7. Szekely Goulash
3 strips bacon, chopped and blanched, 1 tbsp. butter, 3 lg. onions, chopped, 4 tbsp. Hungarian paprika, 3 lbs. lean pork, cut into sm. chunks, 2 1/4 c. beef broth (do not use bouillon cubes), 3 lbs. sauerkraut, rinsed and drained, 3 tbsp. tomato paste, 3/4 tsp. caraway seeds, Salt, Freshly ground pepper, Sour cream

8. Mom's Hungarian Goulash
1 1/2 lbs. ground round beef, 1/4 lb. lean bacon, sliced & diced, 3/4 lb. spaghetti, 2 med. cooking onions, diced, 2 spears celery & leaves, diced, 1 (2 oz.) jar pimentos, diced, 4 to 6 oz. jar button mushrooms or fresh equivalent, 2 qts. home canned tomatoes or 2 lg. cans, plus tomato juice, if needed, 2 bay leaves, 1 tsp. dried parsley, 1/2 tsp. dried basil, 2 cloves garlic, minced, 1/2 green pepper, diced, 4 to 6 oz. stuffed olives, sliced, Salt & pepper, as desired

9. Bograas (hungarian Goulash) With Little Dumplings
2 tbsp. lard or shortening, 2 med. onions, coarsely chopped, 2 1/2 lbs. beef chuck or round, cut into 3/4" cubes, 1/2 lb. beef heart, cut into 3/4" cubes, 1 garlic clove, 1/4 tsp. caraway seeds, 1/2 tsp. salt, 2 tbsp. imported sweet Hungarian paprika, 2 1/2 qts. water, 1 med. tomato, peeled & diced, 2 green or Italian frying peppers, cored & sliced, 3-4 med. all purpose potatoes, peeled & diced, Salt, 1 egg, 3 tbsp. flour
