Pork Chop Spanish Rice Recipe

Ingredients:

5 pork chops, 1/2 inch thick
2 tbsp. shortening
1 tsp. salt
1/2 tsp. chili powder
1/4 c. chopped green pepper
1/4 c. chopped onion
3/4 c. uncooked long grain rice
Dash of pepper
1 (1 lb. 12 oz.) can tomatoes
5 green pepper rings
2 oz. sharp cheese, shredded

Cooking Directions:

Trim excess fat from chops slowly brown chops in melted shortening about 15-20 minutes. Drain. Combine salt, chili powder, and pepper; sprinkle over meat. Add rice, onion, chopped green peppers. Pour tomatoes over. Cover and cook over low heat 35 minutes, stirring occasionally. Add green pepper rings. Cook 5 minutes more or until rice is done and meat is tender. Sprinkle with cheese. Makes 5 servings.
