Chinese Almond Cookies Recipe

Ingredients:

2 3/4 c. flour
1 c. sugar
1/2 tsp. salt
1/2 tsp. soda
1 c. butter
1 slightly beaten egg
1 tsp. almond extract
Whole unblanched almonds

Cooking Directions:

Sift together flour, sugar, salt and soda. Cut in butter until mixture resembles cornmeal. Add egg and almond extract; mix well. Shape dough into 1-inch balls and place 2 inches apart, on an ungreased cookie sheet. Place an almond on top of each cookie and press down to flatten slightly. Bake in slow 325 degree oven 15 to 18 minutes on top rack of oven. Cool on rack. (I use about 3/4 teaspoon of almond extract.)
