Chinese Almond Cookies Recipe

Ingredients:

1 c. butter
1 1/2 c. sugar
1 egg
1 tsp. almond extract
1/2 tsp. vanilla
3 c. sifted flour
1 tsp. baking powder
1/4 tsp. salt
1/2 c. chopped, toasted almonds

Cooking Directions:

Cream together butter and sugar until light and fluffy. Add egg, almond extract and vanilla; blend well.

Sift together flour, baking powder and salt. Gradually add dry ingredients to creamed mixture, mix well.

Roll dough to about 1/4 inch thick on a lightly floured surface. Cut with a lightly floured 2 inch round cookie cutter. Place rounds about 2 inches on greased baking sheets. Sprinkle with almonds. Press almonds down lightly into each round.

Bake in a 325 degree oven 15 minutes or until golden brown. Remove from baking sheets; cool on racks. Makes 4 dozen.
