Simple Simon Bars Recipe
Ingredients:
12 c. flour, sifted6 c. brown sugar, packed
12 c. rolled oats
6 tsp. salt
4 c. butter
9 1/8 c. applesauce
1 1/2 tsp. nutmeg
1 1/2 c. sugar, granulated
8 1/2 c. fig or raisins
3/4 tsp. cinnamon
2/3 c. butter
Cooking Directions:
Sift flour and salt together. Place in mixer and blend in brown sugar. Cut in butter until mixture is the size of small peas. Add the rolled oats and mix; set aside.FILLING:
9 1/8 c. applesauce1 1/2 tsp. nutmeg1 1/2 c. sugar, granulated8 1/2 c. fig or raisins3/4 tsp. cinnamon2/3 c. butter
In a separate mixing bowl, combine the applesauce, figs or raisins, nutmeg and cinnamon.
Spread 11 cups of dough evenly on the well-greased sheet pan. Spread filling evenly over the dough. Sprinkle with granulated sugar and dot with butter. Put on the remaining 8 cups of dough to cover filling. Bake 45-50 minutes until golden on top. Cool on wire rack. Cut 14x7. Serves 98 (2 1/2 x 1 3/4-inch) bars.
