Date Bars Recipe
Ingredients:
3/4 c. dates, chopped3/4 c. orange juice
1 1/4 c. flour
1/4 tsp. salt
3/4 c. brown sugar
3/4 c. butter, unsalted, in small chunks
1/2 c. flaked coconut
1/2 c. walnuts, chopped
3/4 c. old fashioned oatmeal
Cooking Directions:
Over moderate heat, simmer dates and orange juice for 20 - 25 minutes or until mixture is thickened and smooth.Mix flour, salt, brown sugar and butter as for pastry. Add and blend coconut, walnuts and oatmeal. Press half of pastry in bottom of 8 x 8 inch pan and pat flat. Spread date mixture to 1/2 inch from edges. Top with remaining dough, flatten slightly. Bake at 350 degrees for 35 to 40 minutes, until golden brown.
