Pineapple Cheesecake Bars Recipe
Ingredients:
1/2 c. cold butter1 1/4 c. all-purpose flour
1/3 c. sugar
1 tbsp. grated orange peel
8 oz. pkg. cream cheese, softened
1/4 c. sugar
1 egg
1 tbsp. lemon juice
1/2 c. chopped candied pineapple
Cooking Directions:
Preheat oven to 350 degrees. In 1 1/2 quart mixer bowl, cut butter in chunks; add remaining crumb mixture ingredients. Beat at low speed, scraping sides of bowl often, until well mixed, 1 to 2 minutes. Reserve 1/2 cup crumb mixture; set aside. Press remaining crumb mixture into ungreased 8-inch square (1 1/2 quart) baking dish. Bake near center of 350 degree oven for 12 to 17 minutes or until edges are lightly browned.Meanwhile, in same 1 1/2 quart mixer bowl, combine all filling ingredients except pineapple. Beat at medium speed, scraping sides of bowl often, until mixture is light and fluffy, 1 to 2 minutes. Stir in pineapple. Spread filling over hot crust; sprinkle with remaining crumb mixture. Return to oven; continue baking 15 to 20 minutes or until edges are lightly browned. Cool completely; cut into bars. Cover; store in refrigerator. Yield: 2 dozen.
