Blueberry Muffins Recipe
Ingredients:
1/2 c. rolled oats1/2 c. orange juice
1 1/2 c. whole wheat flour
1/2 c. brown sugar
1 1/4 tsp. baking powder
1/2 tsp. salt
1/4 tsp. soda
1/2 c. oil
1 egg, slightly beaten
1 1/2 c. frozen blueberries
2 tbsp. sugar
1/4 tsp. cinnamon
Cooking Directions:
Preheat oven to 400 degrees. Combine oats and orange juice; stir well and set aside. Combine flour, sugar, baking powder, salt, soda, oil and eggs. Mix well. Mix in oats and orange juice. Fold in blueberries. Sprinkle with sugar and cinnamon mixture. Spoon batter into muffin tins lines with muffin papers 2/3 full. Bake 16 to 20 minutes or until golden brown. 149 calories per muffin.
