Lemon Chicken Fetticine Recipe
Ingredients:
2 lbs. boneless, skinless chicken breast, cut in stripsLemon pepper
Parmesan cheese
2 tbsp. flour
Salt
Butter
1 lb. box fettuccine noodles
1/2 pt. heavy cream
Ziploc bag (med.)
Lemon juice or 1 lemon
Cooking Directions:
In ziploc bag: flour, 3 tablespoons Parmesan cheese, lemon pepper (approx. 1 teaspoon), and salt to taste. Add chicken strips and thoroughly coat with mixture.Brown chicken strips in 2 tablespoons butter. Lower heat and cook until done then set aside.
Prepare fettuccine noodles according to package directions while chicken is cooking.
Make sauce: on medium heat, heat heavy cream and 1 tablespoon melted butter plus 2 tablespoons Parmesan cheese. Cook slowly until slightly reduced.
Drain noodles. Squirt chicken with lemon, mix sauce with noodles. Toss chicken in noodles/sauce mixture and serve immediately. Garnish with parmesan cheese. Serves 4.
