Red Potatoes With Lemon Caper Sauce Recipe
Ingredients:
12 sm. red potatoes, peeled & sliced2 tbsp. diced onion
1/2 c. butter, melted
1/4 c. lemon juice
1 tsp. caper juice
2 tbsp. capers, chopped
2 tbsp. parsley
1 tsp. salt
1/4 tsp. pepper
1/4 c. grated Parmesan cheese
Lemon slices (opt.)
Cooking Directions:
Cover potatoes with water, bring to a boil, reduce heat and cook 15 minutes (until tender). Drain and arrange slices on platter and keep warm.Saute onion in butter until tender. Reduce heat, stir in lemon juice, caper juice, capers, parsley, salt and pepper. Cook until mixture is heated. Pour over potatoes. Sprinkle with Parmesan cheese. Garnish with lemon slices. Serves 8.
