Miniature Cheesecake Recipe
Ingredients:
2 (8 oz.) pkgs. Philadelphia cream cheese, softened3/4 c. sugar
1 tbsp. lemon juice
1 tsp. vanilla
2 eggs
Cooking Directions:
Use foil cupcake liners. If miniature cups are used, use Sunshine or Keebler vanilla wafers; otherwise Nabisco will do.Beat together all ingredients well. Put 1 vanilla wafer in the bottom of each foil container. Fill foil 3/4 full of ingredients and bake in oven at 375 degrees for 8-10 minutes. Cool and top with any choice of pie filling; blueberry, cherry, strawberry, etc.
