1. Breck's Caesar Salad
2 heads Romaine lettuce, 1 can anchovies, Juice of 1/2 lemon, 2 cloves garlic, minced, 1 c. olive oil, 3 tbsp. Worcestershire sauce, Dash Tabasco, 2 tbsp. vinegar, 2 eggs, coddled (at last minute), 1 c. croutons, 1 c. Parmesan cheese

Romaine lettuce, Garlic, Salt and pepper, Pinch dry mustard, 1/2 tsp. Worcestershire sauce, 1 tbsp. lemon juice, 1 tbsp. olive oil, 3 anchovy fillets, mashed, 1 coddled egg (cooked in HOT, not boiling water for 2 minutes), 3/4 c. croutons, 1 tbsp. Parmesan cheese

3. Caesar Salad
1 large head romaine lettuce, 1 cup olive oil, 3 cups French or Italian bread, 2 large cloves garlic, 8 anchovy filets, 1 teaspoon Worcestershire sauce, 1 teaspoon dry mustard, 2 tablespoon lemon juice (fresh is best), 1 teaspoon fresh ground black pepper, 1 teaspoon coarse ground salt, 2 egg yolks for large eggs, at room temperature*, 1/2 cup grated Parmesan cheese, 1/4 cup Parmesan cheese, shredded or shaved

1 lg. head Romaine, 1-2 peeled tomatoes, 1/4 c. chopped green onion, 1 c. freshly grated Romano cheese, 1 c. rendered finely chopped bacon, 2 tbsp. chopped fresh mint, 1/4 tsp. oregano, 1/2 c. olive oil, Juice of 1 lemon, 1/2 tsp. fresh ground pepper, 1 coddled egg, 1/3 c. croutons
