Shirred Eggs Cappuccino Recipe
Ingredients:
8 eggs2 tbsp. butter
4 slices Prosciutto, sliced very thin, Canadian bacon may also be used
4 slices Mozzarella cheese (grated may be used)
Salt & pepper to taste
Cooking Directions:
Butter 4 individual ramekins or small baking dishes (round or oval). Break 2 eggs in each dish, set on a low burner and season with salt and pepper.When eggs begin to coagulate, top each dish with sliced Prosciutto (trimmed to the size of the ramekin). Place cheese on top and bake in an oven at 375 degrees until cheese is melted. Eggs should be firm at this time.
Eggs can be cooked more or less on top of the stove or in the oven if you desire them to be firmer and then topped. Shirred Eggs can be made in many ways. Sauteed chicken livers can be used and placed at the sides of the egg yolks. Link sausage may be used. Any ingredients that is put into an omelette goes very well with Shirred Eggs. For example: Spanish Sauce, Hollandaise Sauce, cooked broccoli spears, or other vegetables.
