Chicken Squares With Mushroom Sauce Recipe

Ingredients:

3 c. cooked, diced chicken
1 c. cooked rice
2 c. soft bread crumbs
1/3 c. celery, minced
1/4 c. pimento, diced
4 eggs
1/4 tsp. poultry seasoning
2 c. chicken stock
6 tbsp. butter
6 oz. fresh mushrooms, sliced
6 tbsp. flour
1 chicken bouillon cube
2 1/4 c. hot chicken broth
1/2 c. light cream
1 tbsp. chopped parsley
Salt and pepper

Cooking Directions:

Combine chicken, rice, bread crumbs, celery, and pimento. Beat eggs slightly. Add poultry seasoning and stock. Add this to the chicken mixture and mix lightly but well. Pour into buttered 8 x 12 inch baking dish and bake at 325 degrees for 50 to 60 minutes. Meanwhile, make your sauce. Melt butter in a medium saucepan and add the mushrooms. Saute on low heat about 3 minutes. Add flour and blend. Dissolve bouillon cube in the hot broth and gradually add to the mushroom mixture. Blend well, then add cream and cook until smooth and thick. Add parsley and salt and pepper to taste. Serve over chicken squares.

Serves 6 to 8.
