Fish-n-spinach Roll Ups Recipe
Ingredients:
10 oz. pkg. Green Giant cut leaf spinach in butter sauce1 lb. frozen fish fillets (flounder) thawed
3 eggs, beaten
1 1/2 c. herb seasoned stuffing mix (Betty Crocker)
1/2 c. grated Parmesan cheese
10 3/4 oz. can condensed cream of shrimp soup or cream of mushroom or clam chowder New England and strain out potato
1/2 c. sour cream
1 tsp. lemon juice
1/4 tsp. salt
Cooking Directions:
Heat oven to 350 degrees. Cook spinach according to package directions. Divide fish fillets into 6 to 7 thin serving pieces.In medium bowl, combine eggs, stuffing mix, cheese and cooked spinach. Wrap each fillet around evenly divided portions of the stuffing mixture. Place, seam side down, in 12 x 8 baking dish. In small bowl, combine remaining ingredients; pour sauce over fish. Bake 40 to 45 minutes or until fish flakes easily and stuffing is firm. makes 4 to 6 servings.
Microwave Directions: prepare as directed and microwave 15 to 20 minutes or until fish flakes easily.
