1. Manhattan Clam Chowder
1 dozen clams, steam and then chop, 1/2 lb. bacon, cut in sm. pieces, 1/2 lb. Italian sausage, chopped and drained, 1 onion, or more to suit your taste, 1 garlic, use as many kernels as you like, Celery, chopped center, leaves and center stalks, about 3 stalks, Carrots, as many as you like, chopped quartered, 1 can whole tomatoes or fresh or 1 can stewed tomatoes, 1 bag frozen soup vegetables, Pinch thyme, Pinch of pepper to taste

2. Manhattan Clam Chowder Soup
1 doz. cherry stone clams (steam until open), run juice through cheesecloth to strain, 3 slices bacon, cut sm. & browned until crisp, 1 med. onion, chopped

3. White Clam Sauce
4 dozen small Little Neck clams, washed and steamed open in water or, 2 (6 1/2 ounce) cans chopped clams in can and 1 bottle of clam juice, 8 pieces of garlic, chopped, 3 tbsp. fresh parsley, 1 tsp. oregano, 1/2 tsp. salt, 1/8 tsp. black pepper, Red pepper seeds (according to taste), 1/4 c. olive oil

4. Linguine With Clams & Artichoke Hearts
1 (2 lb.) can tomatoes, diced, with liquid, 1 tbsp. tomato paste, 1/2 tsp. oregano, 1/2 tsp. dried basil, 1/2 tsp. black pepper, 1 tbsp. olive oil, 1/4 tsp. cider vinegar, 3/4 lb. fresh mushrooms, thinly sliced, 2 (15 oz.) cans airtchoke hearts, drained & cut in half if necessary, 3 lb. clams, soaked, cleaned & steamed (can substitute three 6 1/2 ounce cans, chopped clams for fresh), 1 lb. linguine, cooked al dente, 1/4 c. finely chopped fresh parsley

5. L.'s Seafood Clam Chowder
4 qts. littleneck clams (about 1 2/3 c. cooked and chopped), 1 clove garlic, chopped, 1 c. water, 2 oz. salt pork, finely chopped, 2 c. chopped onions, 3 tbsp. flour, 1 1/2 lbs. potatoes, peeled and cut into 1/2 inch cubes, 4 1/2 c. reserved broth from steaming clams, 3 c. fish stock or bottled clam stock, 2 c. light cream, Oyster crackers



6. New England Clam Chowder
2 quarts Little Neck clams, steamed, liquor reserved, 3-4 lbs potatoes, peeled, 1/2 lb lean salt pork, 3 large sweet onions, sliced, 2 whole bay leaves, 1 thick slice bacon (optional), 2-3 celery stalks with green tops, 4 tablespoons fresh parsley, minced, 2-3 green onions or 1 leek, finely chopped (optional), 1-2 lbs frozen sweet corn (as desired), 3 cloves garlic, 1 pint cream, 1 quart clam broth or water, 1/2 gallon milk, pinch celery seed (optional), 3-4 tablespoons flour, 1 stick butter, 1 tablespoon olive oil, salt and pepper, to taste, paprika, to taste

7. Hatteras Clam Chowder
1 dozen chopped fresh chowder clams, including juice, 4 strips bacon, 1 onion, chopped, 4 celery ribs, sliced, 4 large redskin potatoes, chunked, 1/2 cup fresh parsley, chopped, salt and pepper to taste

8. Indoor Clam Bake
Brown kelp (rock weed - the kind that has little floats), Ocean Water

9. Clam Sauce With Pasta
5 cloves garlic, chopped, maybe adjusted to taste, Fresh parsley, 10 oz. can clams, drained, 1 (8 oz.) bottle clam juice, Scallops, Shrimp, Mussels (steamed separately), optional

10. Clams Stuffed With Pork
2 doz. clams, 1/2 lb. ground pork, 2 slices fresh ginger, minced, 1 stalk green onion, minced, 1 tbsp. soy sauce, 2 tbsp. sherry, 1/2 tsp. salt, 1/2 tsp. sugar
