Chicken With Chestnuts Recipe

Ingredients:

3 lbs. chicken, cut up
3 tbsp. olive oil
Salt and pepper
1 onion, chopped
1 clove garlic, minced
1 c. sliced fresh mushrooms
3/4 c. Marsala wine
1 tbsp. dried rosemary
1 tsp. dried thyme
12 fresh chestnuts
2 tbsp. butter

Cooking Directions:

Saute chicken in olive oil, turning pieces often. Season to taste with salt and pepper. When browned, add onion, garlic, and mushrooms. Cook until the onion wilts, then add Marsala and herbs. Cover, lower heat, and simmer 5 minutes.

While chicken cooks, split each chestnut and place in a saucepan. Cover with water and boil 5 minutes; remove chestnuts and peel off shells. Cut in half and add to chicken. Stir in butter and simmer gently for 15 minutes. Serves 4.
