Corn Casserole Recipe
Ingredients:
1 (16 oz.) can creamed corn1 (16 oz.) can corn niblets
1 (8 1/2 oz.) pkg. "Jiffy" corn muffin mix
1 lg. onion, chopped
1/4 lb. butter
1/2 pt. sour cream
1 c. plus more grated cheddar cheese
2 eggs, well beaten
Cooking Directions:
Saute the onion in the 1/4 pound butter. Combine in large casserole: creamed corn, corn niblets; add onion and 1 package of Jiffy muffin mix and 2 eggs, well beaten. Cover with sour cream and top with generous amount of cheese. Bake approximately 40 minutes in 400 degree oven, uncovered.Other Recipes you might like:
