Mexican Cornbread Casserole Recipe
Ingredients:
2 pkgs. Jiffy cornbread mix2 eggs, beaten
3/4 can cream corn
1 lb. hamburger, browned
1 lg. onion, chopped
1 to 2 chopped jalapenos, if desired
1 c. grated cheddar cheese
Cooking Directions:
Brown hamburger, onion and jalapeno. Drain excess grease. Mix cornbread mix, eggs and cream corn together. Spread 1/2 cornbread mixture in lightly greased 9 x 13 inch baking dish. Spoon hamburger mixture on top of cornbread mixture and spread evenly. Sprinkle cheese on top of meat mixture. Top with other half of cornbread mix and spread evenly. Bake at 400 degrees for 45 minutes or until brown.Other Recipes you might like:
