Cajun Veal Scallopini Recipe
Ingredients:
1 1/4 lb. veal or turkey slices3 tbsp. flour
1/4 tsp. basil
1/8 tsp. cayenne pepper
1/4 tsp. thyme
1 1/4 c. julienned carrots
1 1/2 c. julienne cucumber
1 minced garlic clove
Few drips tabasco
1/2 tsp. paprika
1/8 tsp. black pepper
2 tbsp. butter, divided
1 julienned red pepper
1/4 c. half and half
Cooking Directions:
Pound meat until thin. Dust with combination of next 5 ingredients. Melt 1 tablespoon butter and saute meat about 1 minute on each side. Add additional butter when needed. Remove meat. Stir in chicken broth and thyme. Boil and reduce heat. Place meat and vegetables into broth and cover. Simmer 10 minutes. Remove and keep warm.Reduce juices by half, about 1 to 2 minutes and reduce heat. Stir in remaining ingredients and heat to servings temperature. Spoon over meat and vegetables. Makes 6 servings.
