Veal Scallopini Recipe
Ingredients:
1 1/2 lbs. boneless veal, cubed1/3 c. flour
3-4 tbsp. olive oil
3 cloves garlic
1/3 c. onion, chopped
3/4 lb. mushroom pieces or 1 sm. can
1 c. beef bouillon
3/4 c. wine (Cream Red Concord is okay)
1/8 tsp. black pepper
3/4 tsp. oregano
Cooking Directions:
Coat meat with flour and brown in a wok using 2 or 3 tablespoons olive oil; transfer to platter.Add 1 tablespoon oil to wok and saute garlic, onion, and mushrooms for 5 minutes. Stir in remaining ingredients and bring to a boil and simmer covered for 10 minutes. Add veal and cook for 1 minute more. Serve over wide noodles. Yields: 4 servings.
