Veal Scallopini Recipe

Ingredients:

3 lb. veal steak, 1/4 to 1/3 inch thick
1/2 c. all-purpose flour
Salt, pepper and paprika
1 (6 oz.) can (1 1/3 c.) broiled sliced mushrooms
1 bouillon cube
1 (8 oz.) can (1 c.) seasoned tomato sauce
1/4 c. chopped green pepper

Cooking Directions:

Pound meat thoroughly with meat pounder. Cut in serving pieces. Season flour with 1 teaspoon salt, dash of pepper and 2 teaspoons of paprika. Coat meat in mixture. Brown in hot fat. Place in ovenproof casserole dish. Drain mushrooms, reserving liquid.

Add water to mushroom liquid to make 1 cup, heat to boiling. Dissolve bouillon cube in the hot liquid and pour over meat. Bake in moderate oven at 350 degrees for 30 minutes. Combine tomato sauce, green pepper, mushrooms; pour over meat and continue baking for 15 minutes more. Baste meat with sauce just before serving and sprinkle with Parmesan cheese. Serves 8 to 9.
