1. Mexican Cheese - Chili Dip
8 oz. shredded Monterey Jack cheese, 15 oz. can Libby's chili with beans (if you prefer you can use no beans), 1/2 c. evaporated milk, 1 tsp. chili powder, 1/3 c. diced fresh tomatoes, 1/3 c. sliced green onion, 1/4 c. canned diced mild green chilies, Small chili pepper & cilantro sprig (not necessary)

2. Mexican Chili Dip
6 chopped green onions, including green parts, 2 lg. tomatoes, chopped, 1 sm. can chopped green chilies, 1 sm. can chopped black olives, 3 tbsp. olive oil, 1 1/2 tbsp. vinegar and 1 tsp. garlic salt

3. Mexican Red Chili
1 lb. hamburger meat (lean), 3 lg. jalapenos (seeded and chopped), 1/2 lb. hot sausage, 1/2 lb. stew meat, 1 c. chopped onion, 3/4 c. chopped bell pepper, 2/3 c. chopped celery, 1 can New Orleans kidney beans, 3 tbsp. chili powder, 1 tsp. salt, 3 lg. cloves garlic, minced, 1 c. French onion soup, 1 can chopped green chilies, 1 can tomatoes, 2 cans tomato sauce, 1/2 tsp. sugar, 1 tbsp. cayenne, 1 tsp. oregano, 2 tbsp. jalapeno juice, 1/4 tsp. garlic powder, 3/4 tsp. Tabasco sauce, 1/2 tsp. cumin, 1/2 tsp. onion powder

4. Chili Salsa
2 cans Mexican stewed tomatoes, 1 sm. can diced green chilies, 6 green onions, diced, 1 tbsp. Wesson oil, Garlic salt & salt to taste

5. Chili Sauce For Hot Dogs
3 - 3 1/2 lbs. ground beef, 2 pkgs. French's Chili-O-Mix, 1 (15 oz.) can tomato sauce, 2 cans Mexican style Manwich



6. Dorito Chili Dip
1 lb. of ground chuck, 1 (8 oz.) cream cheese, 1 can Hormel chili (no beans), 1 sm. pkg. Mexican shredded cheese, Dorito chips

7. Mexican Chili Cheese Balls
1/2 lb. Cheddar cheese, grated, 3 oz. cream cheese, 1/2 clove garlic, crushed, 1/4 c. chili powder

8. "hot" Chili
2 lb. ground round or ground turkey, 2 cans hot Mexican chili beans, 1 can tomato paste, 1 lg. can tomato sauce, 1 lg. can whole tomatoes, chopped, 1 lg. onion, chopped, 1 green pepper, chopped, 1/2 jar chopped jalapeno peppers, 2 tbsp. Texas Pete, 3 tbsp. chili powder, 1 tsp. oregano, 1 tsp. sweet basil, 2 bay leaves, 1 tsp. red pepper

9. Chili Verde
1 lb. cubed pork or unseasoned ground pork, 1 lg. tomato or Mexican style tomatoes, stewed, 1/2 tsp. oregano, 1 tsp. salt, 1/2 c. onions, 16 oz. can of green chilies, diced OR fresh green chili peppers, Peeled peppers

10. Chili Verde
3 (7 oz.) cans Ortega chilies, whole, 3 lbs. boneless pork, 2 tbsp. oil, 1 med. onion, chopped, 2 cloves garlic, minced, 10 oz. green chili sauce, 1 can tomitillos (Mexican green tomatoes), 2 cans consomme soup, 1/4 c. white wine, 1/2 tsp. oregano, 1 tsp. cumin, Salt and pepper to taste
