Mexican Rice Recipe

Ingredients:

1 c. white rice, uncooked
2 tbsp. oil
4 c. tomato juice
4 tbsp. butter
1/2 tsp. cumin
1/2 green pepper, chopped
2 garlic cloves, chopped
1 1/2 c. onion, chopped
2 fresh or 1 (18 oz.) can of tomatoes, chopped

Cooking Directions:

Fry rice in oil until browned. Heat tomato juice and add to rice. Add all other ingredients and simmer covered over a low heat until tomato juice is absorbed and the rice is tender, about 20 minutes.

Cooked hamburger may be added to make a complete casserole.
