Fish In A Basket Recipes
1. Grilled Trout
6 (4 oz.) trout fillets, 3 tbsp. butter, melted, 2 med. lemons, thinly sliced, Pam cooking spray, Fresh parsley sprigs (opt.), 2 med. lemons or limes, thinly sliced (opt.), Sauce (recipe follows), 3 tbsp. butter, 1/4 tsp. pepper, 2 tbsp. lemon juice
2. Grilled Tuna Steaks
4 tuna (or swordfish or halibut) steaks cut 1/2 inch thick, 2 tsp. olive oil, 2 tsp. butter, melted, 2 tsp. soy sauce, Lemon or lime wedges (optional)
3. Fried Fish
2 lbs. fillets, 1 tsp. salt, 1/8 tsp. pepper, 1 tbsp. milk, 1 egg, slightly beaten, 1 c. cornmeal, Cooking oil
4. R. C.'s Spicy Grilled Fish
1/3 c. salt, 1/4 c. garlic powder, 1/4 c. freshly ground black pepper, 2 tbsp. cayenne pepper, 2 tbsp. thyme, 2 tbsp. oregano, 1/3 c. paprika, 3 tbsp. onion powder
5. Fish And Chips
1 1/2 lbs. fillet of halibut, cod or flounder, 1 tbsp. fresh lemon juice, 1 1/2 c. flour, 1 tsp. salt, Fresh ground black pepper, 1 tsp. paprika, 1 c. beer, 3 lg. baking potatoes, Ice water, Oil, 1 tsp. coarse salt, Malt vinegar
6. Tuna Pasta Salad
2 cans tuna fish (drained & flaked), 8 oz. rotelle pasta, 3 c. sm. fresh broccoli florets, 1/2 basket cherry tomatoes, sliced in half, 1/2 can pitted black olives, sliced, 1 tsp. freshly ground black pepper, 1/2 c. grated Parmesan cheese, Basil-mayonnaise dressing (recipe below), 1/2 c. walnut halves (toasted, see hint), 1 c. mayonnaise (or 1/2 c. mayonnaise & 1/2 c. yogurt), 1/2 c. fresh packed basil leaves, 2 cloves garlic, chopped, 1 tbsp. lemon juice, 1/2 c. Parmesan cheese
7. Mary's Summer Salad
3 c. elbow macaroni, cooked, rinse in cold water, drain, 1 lg. can tuna fish, Cherry tomatoes, quartered (half a basket), 1/2 sm. jar of pimento stuffed olives, cut in circles, Mayonnaise or Miracle Whip to taste, Salt & pepper to taste
