Grilled Ginger-soy Fish Steaks Recipe

Ingredients:

6 (1" thick) fish steaks, such as halibut, salmon, tuna or swordfish
4 garlic cloves, crushed
3 tbsp. soy sauce
1 tbsp. rice wine vinegar or dry sherry
3 tbsp. vegetable oil
2 tbsp. sugar
2 tbsp. minced fresh ginger

Cooking Directions:

Place the fish in a glass or ceramic bowl. Mix marinade ingredients and pour over the fish. Marinate, covered for 2 hours.

Arrange coals to one side of grill and light. When coals are covered with gray ash, oil the grill rack to prevent sticking. Place the fish steaks on the lower temperature side of the grill. Cook 4 minutes on each side, brushing with the remaining marinade. To test for doneness, press thumb on fish. It should be firm, not give (undercooked), and not hard to the touch (overcooked). Discard the remaining marinade. Total Cooking Time: 8 minutes. Serves 6.
