2 lb. ground turkey, 1 lb. ground pork sausage, mild or hot, 1/2 c. uncooked rice, 1 med. onion, grated, 1 green pepper, grated, 1/4 c. hickory smoked BBQ sauce, 2 tbsp. powdered onion, Salt & pepper, 1 (8 oz.) can tomato sauce

1 precooked Louis Rich hickory smoke turkey breast, cubed, 1 to 1 1/2 c. seedless grapes (red or green), 1/2 c. mayonnaise (not salad dressing), 3/4 lb. Jarlsburg cheese, cubed, 1 c. cashews, 1/4 c. sherry, Paprika

1 tbsp. cayenne pepper, 1 tbsp. black pepper (coarse ground), 1 tbsp. white pepper, 1 tbsp. garlic powder, 1 tbsp. onion powder, 1 tbsp. paprika, 1 tbsp. sage, 1 tbsp. dill weed, 1 or 2 turkeys, 12-18 lbs., 20 lbs. fresh, dry charcoal, Up to 10 qts. very hot to boiling water, 4-5 qts. to be used at the beginning; the remainder to be added after 4 hours, 2 lbs. hickory or mesquite wood chips which have been soaked in water for at least 30 minutes prior to use

Hickory Smoke flavor, 1 tsp. basil, 1 tbsp. brown sugar, 1 lb. turkey ham, finely diced (put in last 1 1/2 hours)
