Cheese Stuffed Meat Loaf Recipe

Ingredients:

1/2 lb. Mozzarella cheese (not slices)
2 lb. lean beef, ground
2 eggs
1/2 c. seasoned bread crumbs
1 c. tomato juice
1/2 tsp. salt
1 tsp. oregano
Few grains of pepper
2 sm. onions, minced
8 paper-thin slices of boiled ham

Cooking Directions:

Grate cheese; set aside. Combine beef, eggs, bread crumbs, tomato juice, salt, pepper, oregano. Saute onions in a little butter until brown. Add to meat mixture; mix well.

Flatten into an oblong shape on a sheet of foil. Place ham slices then grated cheese on top, keeping them 1-inch from edge. Use the foil to fold meat mixture over ham and cheese, closing all openings.

Turn loaf from foil into a greased 8x5x3 loaf pan. Shape loaf. Bake at 350 degrees for 60 minutes. Serves 6.
