Rotisserie Chicken Recipes


1. Brandied Chicken Casserole
2 tbsp. butter, 1/2 c. chopped onion, 2 tbsp. chopped green pepper, 1 rotisseried chicken, cut into pieces, 10 1/2 oz. can condensed cream of chicken soup, 6 tbsp. milk, 2 tbsp. brandy, 3 - 4 oz. can sliced mushrooms, drained, 2 tbsp. sliced pimiento stuffed green olives, Dash pepper

2. Roast Hog (or Hog Roast)
1 hog, 100-150 lb. (140 to 200 lb. weight), Roaster, 10 roasting chickens or hindquarter of venison, 10 big onions, approximately, 6 (20 lb.) bags charcoal, 20 lb. sweet wood chips - apple or cherry

3. Mustard Chicken With Tomatoes
1/2 c. mayonnaise, 5 tsp. Dijon mustard, 1 tbsp. red wine vinegar, Salt and pepper, 3 tbsp. oil, 1 rotisserie cooked chicken, 4 slices tomatoes, 2 tsp. chopped fresh herbs (chives and parsley)

4. Rotisserie Garlic Chicken
1 chicken (3 lbs average), 1 tsp salt, 10 cloves garlic, peeled, 2 tablespoons butter, melted, 2 tablespoons Hungarian paprika, 2 teaspoons salt

5. Boston Rotisserie Style Chicken
1/4 cup olive oil, 1 tablespoon honey, 1 tablespoon freshly squeezed lime juice, 1/4 tsp paprika, seasoned salt, 4 chicken breast halves with skin, garlic and onion powder (for sprinkling), cracked black pepper
