Smoked Turkey Salad Recipe
Ingredients:
1 1/2 lbs. smoked turkey, skinned into 2 inch julienne3/4 lb. Monterey Jack or jarlsberg cheese, julienne
2 c. seedless green or red grapes, washed
1 c. chopped celery
1 1/2 c. sherry mayonnaise
Salt and freshly ground pepper to taste
1-2 tbsp. water packed green peppercorns, drained
1 egg
2 egg yolks
1 tbsp. Dijon mustard
1/4 c. sherry vinegar
Salt and pepper to taste
2 c. corn oil
Cooking Directions:
Combine turkey, cheese, grates, and celery in bowl. Add sherry mayonnaise, and gently toss; season with salt and pepper to taste. Toss again. Cover and refrigerate until serving, then arrange on plate before serving and sprinkle peppercorns.SHERRY MAYONNAISE:
1 egg2 egg yolks1 tbsp. Dijon mustard1/4 c. sherry vinegarSalt and pepper to taste2 c. corn oil
Combine and process 1 minute, then dribble oil slowly while motor running - season to taste. Refrigerate.
