Soft Fried Noodles Recipe

Ingredients:

3 c. fine noodles
1/2 c. chicken broth
3 tbsp. soy sauce
1 tsp. cornstarch
3 tbsp. oil
1 c. shredded zucchini
1 c. shredded mushrooms
1/2 c. bean sprouts
1/2 c. shredded carrots
1/2 c. sliced green onion
1/2 tsp. ginger
1 lb. diced chicken breast or pork; optional

Cooking Directions:

Cook noodles according to package directions. Rinse in cold water; drain. Blend chicken broth and soy sauce into cornstarch; add ginger and set aside. Preheat wok over high heat with 1 tablespoon oil. Add 1/2 the noodles and fry for 5-7 minutes until beginning to brown. Remove and keep warm. Fry the other 1/2 the same.

Stir fry meat of your choice, and set aside. Add remaining oil, add vegetables, fry until almost desired crispness. Stir in chicken broth mixture and meat. Cook until thick and bubbly. Stir in noodles and heat through.
