Mexi-corn Lasagna Recipe
Ingredients:
1 lb. ground beef, browned & drained1 (17 oz.) can corn, drained
1 (15 oz.) can tomato sauce
1 c. Pace Picante Sauce
1 tbsp. chili powder
1 1/2 tsp. cumin
1 (16 oz.) carton low fat cottage cheese
2 eggs, slightly beaten
1/4 c. Parmesan cheese
1 tsp. oregano
1/2 tsp. garlic salt
1 pkg. tortillas, at least 12
Cooking Directions:
Combine first 6 ingredients, simmer 5 minutes. Arrange 6 tortillas on bottom and sides of lightly grease 13"x9"x2" baking dish, overlap as necessary. Top with half meat mixture. Spoon cheese mixture over meat. Arrange remaining tortillas over cheese mixture. Top with remaining meat mixture. Bake in preheated 375 degree oven about 30 minutes. Remove from oven, sprinkle with 1 cup shredded cheddar cheese. Let sit 10 minutes.Other Recipes you might like:
