Lattice-top Pie Shells Recipes
1. Blueberry Pie
1 can blueberry pie filling, 1 pkg. frozen blueberries or about 3 c. fresh, 1 tsp. cinnamon, 2 tsp. lemon juice, 1/3 tsp. salt, butter for dotting, Unbaked pie shell & lattice top crust
2. Sugar Pie
2 c. packed brown sugar, 2 tbsp. flour, 1 egg, 2 tbsp. butter, 1 tsp. vanilla, 1 can Carnation milk, 2 pie shells and pastry to make lattice tops
3. French Apple Pie
Pastry for 2 crust pie, 1/3 c. sugar, 2 tbsp. flour, 1 c. milk, 3 egg yolks, 1 tbsp. butter, 1/2 tsp. vanilla extract, 2 lbs. tart apples, 1 tbsp. lemon juice, 2 tbsp. butter, 2 tbsp. sugar, Dash of nutmeg, 3/4 c. apricot preserves, 1 egg yolk
4. Apricot Pie
1 (8 1/4 oz.) can crushed pineapple, 2/3 c. granulated sugar, 2 tsp. cornstarch, 1 tbsp. butter, 2 c. cooked apricots (dried), 1 unbaked pastry pie shell and strips for lattice top or whole-top crust
5. Apricot Pie
2 1/2 c. dried apricots, 1 c. sugar, 1 1/2 c. water, possibly 2 c., 2 tbsp. quick tapioca, 1/2 tsp. salt, butter for dotting, 1 tsp. cinnamon, Unbaked pie shell, 1 lattice top crust
