Apricot Pie Recipe

Ingredients:

2 1/2 c. dried apricots
1 c. sugar
1 1/2 c. water, possibly 2 c.
2 tbsp. quick tapioca
1/2 tsp. salt
butter for dotting
1 tsp. cinnamon
Unbaked pie shell, 1 lattice top crust

Cooking Directions:

Cook apricots with rest of ingredients. Bring to a boil. Reduce heat and cook and stir for 2 or 3 minutes. Let cool. When cool, pour into unbaked pie shell. Dot with butter. Cover with a top crust or a lattice crust. Moisten top crust and sprinkle with sugar.
