Mini Sweet Potato Pies Recipe

Ingredients:

2-3 med. sweet potatoes
2 cans Hungry Jack biscuits
1 1/2 c. sugar
1 1/2 c. water
1 stick butter
2 tbsp. cinnamon or to taste

Cooking Directions:

Slice potatoes thick and boil for 5 minutes. Divide biscuits in half, mash each half flat, put one slice of potato and fold over and pinch sides together. Line pan with biscuits. Melt together sugar, water, cinnamon and butter. Pour over biscuits and bake on 325 degrees for approximately 20 minutes. This makes 2 (9"x13") pans or 40 pies.
