Mom's Parsley Potatoes Recipe
Ingredients:
4 lg. boiling potatoesWater
Salt
1 med. onion
1 clove garlic, minced
1/2 c. finely chopped parsley
3 tbsp. vegetable oil
1 1/4-1 1/2 c. chicken broth or water
Salt & pepper to taste
Cooking Directions:
Peel and slice potatoes 1/4 inch thick; put in water. Saute onion, garlic and parsley for 5-10 minutes until soft but not brown. Drain potatoes and add to skillet. Saute 5 minutes. Add broth and bring to boil. Lower heat and cover. Simmer until potatoes are cooked, 20 minutes.Other Recipes you might like:
