1. Beef Stuffed Party Slices
1 (12 oz.) piece beef, cooked med.-well and cut into 1 inch pieces, 1/2 tsp. salt (if purchasing meat from the deli, reduce salt to 1/4 tsp.), 1/8 tsp. pepper, 2/3 c. mayonnaise, 1/4 c. each green onions, red pepper and water chestnuts, finely chopped, 1/8 tsp. dried thyme leaves, crushed, 2 (8 inch) pieces French bread, without tapered ends, Horseradish sauce (if desired)

6-8 lb. whole salmon, 1/2 med. onion, minced, 1 carrot, minced, 2 stalks celery, minced, 8 tbsp. butter, 1 c. sliced mushrooms, 1 c. coarsely chopped water chestnuts, 2 c. 1 (10 oz.) pkg. frozen peas, 2 onions, chopped, 2 celery stalks, chopped, 1/2 c. butter, 1 (5 oz.) can water chestnuts, 1 (10 3/4 oz.) can mushroom soup, 1 1/2 tbsp. flour, Salt and pepper, 1/2 pkg. seasoned stuffing
