Diane's Chicken Recipe

Ingredients:

16 oz. can chicken broth
6 chicken breast halves
1 can water packed artichoke hearts
6 tbsp. butter
1/4 c. flour
3/4 c. Half & Half
1/2 c. Parmesan cheese
2 tbsp. sherry
1 lb. fresh mushrooms, sliced
Salt and pepper to taste

Cooking Directions:

Cook chicken in broth saving 3/4 cup for sauce. Skin chicken and cut into bite size pieces. Melt 4 tablespoons butter, stir in flour, salt and pepper, broth and Half & Half. Add cheese and sherry; cook until thick and bubbly. Set aside. Saute sliced mushrooms in remaining butter. Slice artichoke hearts. Layer chicken pieces and hearts in 9 or 10 inch square pan. Cover with sauce and top with mushrooms. Bake 30 to 40 minutes at 325 degrees.
