Stuffed Pot Roasted Wild Duck Recipe
Ingredients:
4 tealSalt, red pepper and garlic powder to taste
3 lg. onions
2 lg. Irish potatoes, peeled and cubed
6 slices of bacon, cut in pieces
Lemon juice
Oil
1 bunch of green onion tops, chopped
Cooking Directions:
Season ducks well inside and out with salt, red pepper and garlic powder. Cube two of the onions and mix together with cubed potatoes, bacon and seasoning; stuff the ducks with the mixture and skewer ducks closed with toothpicks.Sprinkle ducks with lemon juice and let set overnight. Brown ducks in a small amount of oil; add enough water to cover and the remaining onion, chopped.
Cook over medium heat until tender, an hour to an hour and a half. Serve over rice. Serves four.
