Scalloped Potatoes Recipe

Ingredients:

6 c. new potatoes (about 2 1/2 lb.)
1 or 2 sm. onions, thinly sliced into rings
Salt and pepper to taste
2 c. cottage cheese
1 c. sour cream
1 1/2 c. shredded cheddar cheese (6 oz.)
Shake of paprika

Cooking Directions:

Preheat oven to 350 degrees. In a large pot of boiling water cook potatoes until just tender, peel and slice thin. Alternate a layer of potatoes then onions in a 9 x 13 inch buttered baking dish, sprinkling the potatoes with salt and pepper as you layer. In a medium bowl combine cottage cheese and sour cream. Spoon over potatoes, top with cheddar cheese. Sprinkle with paprika and bake 20 minutes until bubbly and golden.
