Chicken And Swiss Salad Recipe

Ingredients:

1/2 c. plain yogurt
2 tbsp. mayonnaise
1 tbsp. chopped fresh parsley
1 tsp. prepared mustard
1/4 tsp. rosemary
1/4 tsp. garlic powder
24 sliced cucumber rounds, 1/4 inch thick
1 tsp. horseradish
1 head lettuce
12 sliced green pepper rings
6 slices Swiss cheese (1 oz. each)
6 slices sweet red onion
6 slices cooked chicken or turkey (1 oz.each)
12 tomato slices

Cooking Directions:

Blend together yogurt, mayonnaise, parsley, horseradish, mustard, rosemary and garlic. Cover and chill while preparing remaining salad. Remove core from lettuce - cut crosswise to get 6 slices, 1/2 inch thick. Place lettuce slices on serving plates. Top each with 2 green pepper rings - 1 slice cheese - 1 slice onion 1 slice chicken - 4 slices cucumber and 2 slices of tomato. Top each serving with 2 tablespoons yogurt mixture. Yield: 6 servings - 1 serving = 224 calories.
