Chicken Escarole Recipe
Ingredients:
4-6 boneless chicken breasts1 egg
Flour
Head of escarole
Garlic, crushed
1 c. dry white wine
1 c. chicken broth
1-2 c. Mozzarella cheese
Parmesan cheese
Olive oil
Cooking Directions:
Pound out the chicken breasts; dip in egg and flour. Saute in olive oil. Set chicken breast aside. Saute crushed garlic and chopped escarole until wilted. Add chicken broth and wine. Place chicken breasts in baking pan and pour sauce over. Shred Mozzarella and sprinkle over chicken. Top it with Parmesan. Cover with foil and bake at 350 degrees for 45 minutes.
