Spaghetti Salad Recipe

Ingredients:

2 lb. ripe, fresh tomatoes
2 cloves garlic, minced
8 fresh basil leaves, shredded
1/8 tsp. oregano
1 tbsp. fresh parsley
1 1/2 tsp. salt (optional)
1/4 tsp. freshly ground black pepper
5 tbsp. olive oil
1/2 lb. mozzarella cheese, diced
1 lb. spaghetti

Cooking Directions:

1. Coarsely chop tomatoes and mix with garlic, herbs, salt, pepper, oil and cheese.

2. Allow to rest for 1 hour.

3. Toss with hot cooked pasta. Heat from the pasta will melt the cheese.
